1tbsp. olive oil
1 medium onion diced
4 garlic cloves diced
1 red bell pepper diced
3 medium sweet potatoes (cubed)
2tsp. dried oregano
1tsp. garlic powder
1/4tsp. cayenne optional
1/2tsp. sea salt
1/2tsp. black pepper
1 can black beans (or 16 oz dried beans, cooked)
3 c water
3 c chopped kale
Add olive oil to a stock pot over medium-high heat. Add onion, bell pepper, and garlic and sauté until translucent. Stir in sweet potatoes and sauté for 2 minutes.
Mix bone broth with water. Add bone broth mixture to stock pot, add spices, sea salt, pepper, beans, and bring to a boil. Reduce to a simmer and cook for 15-20 minutes, until sweet potato is tender.
Stir in chopped kale and cook for 2-3 minutes, or until wilted.
